Blender cassava candy recipe

This moist and creamy cake, also called cassava bombocado, is a classic of June parties that goes well at any other time of the year! This recipe does not include any type of flour, not even wheat, so it is a gluten-free recipe. You can also make it lactose-free if you use lactose-free condensed milk, it won't make any difference to the flavor and so this sweet is also valid for those who can't consume lactose.

Ingredients for making cassava bombocado from a blender:
½ kilogram of cooked and mashed cassava
3 eggs
1 glass of coconut milk (200 ml)
1 can of condensed milk
1 cup of grated coconut (80 grams)
1 tablespoon of butter or margarine
1 teaspoon of vanilla essence
1 teaspoon of baking powder
How to make cassava bombocado from a blender:
Start by mixing all the ingredients in a blender with the exception of the yeast and the grated coconut - the coconut gives texture to the cake and makes it more delicious!
Tip: Preferably use fresh grated coconut, it tastes better than dry grated coconut!
After beating everything very well, add the grated coconut and yeast and stir only with a spoon, to mix. Place the dough in a greased and floured rectangular pan.
Bake the cassava bombocado for 40-50 minutes, in an oven preheated to 180ºC, or until golden on top. Remove from oven, allow to cool completely and cut into squares. Your snack is ready! Enjoy this sweet cassava recipe and let us know what you think in the comments. Enjoy your food!
